What is brisket? Why is it cooked low & slow?
Brisket comes from the breast of the animal. Its dense connective tissue rewards time rather than fast, aggressive cooking.
Low-and-slow cooking gives collagen time to transform while smoke, heat and moisture shape the meat gradually. The goal is not simply to make brisket soft, but to build texture and flavour over many hours.
At TÜTSÜ, brisket is cooked for hours with real oak smoke. During that process the exterior develops the dark, intensely flavoured crust known as bark, while fat and connective tissue slowly render and soften.
There is no single cooking time for every brisket. Size, fat content and the behaviour of each cut matter, which is why good brisket is guided by the meat rather than the clock alone.
